About the Book:
Thanks to The Artisan Jewish Deli at Home by Nick Zukin and Michael C. Zusman, staples of popular Jewish delicatessens are making their way from the coasts to the home kitchen. The typical little-of-this-little-of-that Jewish cooking-style instructions are finally pinned down in this collection of artisanal-style Jewish recipes, tips, and tricks. The book includes 100 recipes for Jewish Deli favorites such as pastrami, latkes, bagels, honey-sweet challah, and kasha varnishkes with wild mushroom sauce, all made accessible for the home cook. The book is also peppered with cultural context, offering profiles of some of the authors’ favorite temples of modern Jewish gastronomy including Mile End, Katz’s Delicatessen, and Wise Sons Deli, as well as interviews with Joan Nathan and other Jewish food luminaries.
About the Authors:
Nick Zukin is the “Zuke” in Kenny & Zuke’s Delicatessen in Portland, OR. A prominent Portland food blogger, he approached Ken “Kenny” Gordon in 2005 with a proposition to open a Jewish deli specializing in house-made pastrami and hand-rolled bagels. After testing the waters selling at the farmers’ market and at pop-up brunches, Nick helped open the first of a new wave of Jewish delicatessens focused on producing artisanal eats.
Michael C. Zusman is a state court judge by day and a freelance restaurant and food writer at night, working for several local publications in his hometown of Portland, OR. Michael is also a serious amateur baker and supplies the bread recipes used by Kenny & Zuke’s Delicatessen.
